Cheese shortbread biscuits

Ingredients:

200g self raising flour

100g butter

120g 1057 Scottish cheddar

Pinch of salt

Smoked paprika (optional)

Poppy seeds (optional)

Garlic granules (optional)

Sesame seeds (optional)

Method:

Mix together the flour, butter, 100g cheese, smoked paprika and good pinch of salt

The mixture will be very short but bring it together, cover with cling film and place in the fridge for approx 30 minutes.

Meanwhile heat oven to 180 degrees fan.

Remove the dough from the fridge and cut into rounds, fingers or whatever you choose, about 1cm thick.

Place them in a non stick baking tin.

Get creative and add poppy seeds, garlic or sesame seeds to the top. I added extra cheese (and it was worth it). This is the extra 20g of cheese should you wish to use it.

Bake in the oven for 10-12 minutes until cooked.

Let cool and eat!

This recipe makes about 12 shortbread rounds.
